What you need:

+ 1 lb. NC sweet potatoes, cut into 1 inch cubes
+ 1 lb. white potatoes, cut into 1 inch cubes
+ 1 large onion, chopped
+ 2 cloves garlic, grated
+ 1 bay leaf
+ 1 tsp. dried leaf thyme
+ 1/8 tsp. cayenne pepper
+ 1/2 tsp. salt
+ 2 c. low sodium chicken stock
+ 1 c. milk
+ 1 c. buttermilk
+ 2 Tbsp. fresh lime juice
+ fresh cilantro, chopped
What to do:
1. Combine first 9 ingredients in a stock pot. Bring to a boil, reduce heat, and simmer, covered for 15 min.
2. Transfer the mixture into a food processor and blend until very smooth. Return the mixture to the stock pot. Add milk, buttermilk and lime juice. Heat soup to serving temperature.
Garnish individual bowls with cilantro.
