Peach Basil Bruschetta

What you need:
* 2 med. sized ripe peaches
* 1 med. sized yellow tomato (2 med. sized red tomatoes may be substituted)
* 1 med. sized orange tomato
* 6 large basil leaves, finely chopped
* 1/2 clove garlic, minced
* 1/4 c. feta cheese, crumbled
* 1 tsp. olive oil
* pinch of salt
* pinch of black pepper
* 1 French baguette loaf
* olive oil for brushing

What to do:
1. Finely dice the peaches and tomatoes and place in a mixing bowl.
2. Add the chopped basil, minced garlic, feta cheese, salt, pepper and olive oil. Toss until all ingredients are well combined. Place in refrigerator for half an hour to an hour.
3. Heat oven to 350° F (180° C). Slice French baguette diagonally. Brush both sides with olive oil and place on baking tray. Place in oven for 5 to 7 min. until toasted. Remove from oven.
4. Spoon about 1 to 2 Tbsp. of the bruchetta mixture on each slice of bread. Place on serving tray and serve. If desired, garnish with a touch of crumbled feta cheese or a basil leaf.
